Time moves quickly.
I’ve cooked long enough to know:
trends arrive, peak, and disappear.
I’ve followed them.
I’ve taken shortcuts.
For a while, “luxury” felt like proof—
as if price could replace meaning.
But craft does not compete with time.
It answers to it.
Traditional technique exists
to repeat what matters,
until it becomes quiet and true.
I still believe
the smallest, almost invisible expression
deserves to be seen.
Food is not made to impress.
It is made for a calm dialogue
with one person at the counter.
